• 2 lb bag frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheese (sharp cheddar works great)
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 stick butter, melted
  • 1/2 cup finely diced onion
  • 1 tspn salt
  • 1 cup crushed potato chips

I make these potatoes for lots of family get-togethers and parties.  Everyone always loves them and I love making them because they can be made the day ahead and then just popped in the oven an hour before it’s time to eat.  For big parties, I always make one more 13×9 than I think we will eat and it never fails… it’s always all gone!

Directions:

Preheat oven to 375.  In a large bowl combine cheese, sour cream, chicken soup, margarine, onion, and salt and mix well by hand.  Add hash brown potatoes and mix again.  Spread evenly into a 13×9 dish.  Bake for one hour, adding crushed potato chips for the last fifteen minutes
