• 1 T. vegetable oil
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 2 T. chili powder
  • 1 t. cumin
  • 1/2 t. oregano
  • 1/4 t. cayenne pepper
  • salt
  • 1 pound ground beef (90% lean)
  • 1/2 C canned tomato sauce
  • 1/2 C. low sodium chicken broth
  • 2 t. cider vinegar
  • 1 t. light brown sugar

So how many of you have “taco night” on a regular basis? I know we do. It’s a simple and quick, tasty dinner! For the past few years I would just brown up my meat, reach in the cupboard and pull out a packet of Taco meat seasoning and I had instant taco meat in 3 minutes! Well, one day I had all the fixings cut up, meat browned, and all I needed to do was add the seasoning. I was out of it! Should have checked on that BEFORE I started to prepare my meal! So, I came across this recipe. For the most part (unless I am in a complete rush) I use this every time. Love it!

Directions:

Heat the oil in a medium skillet over medium high heat until shimmering.  Add the onion and cook until softened, about 5 minutes. Stir in the garlic, spices, and 1/2 teaspoon salt and cook until fragrant about thirty seconds.  Stir in the ground beef and cook, breaking it up with spoon until no longer pink, about 5 minutes.  Stir in the tomato sauce, broth, vinegar, and sugar until thickened, about 10 minutes.  Season with salt to taste.
