• 2 C. Flour
  • 1/4 t. Baking powder
  • 2 t. Baking soda
  • 1 t. Salt
  • 2 T. Cinnamon
  • 2 T. cocoa
  • 2 C. Sugar
  • 2 T. Vanilla
  • 3 Eggs
  • 2 C. zucchini (shredded)
  • 1/2 C. pecans or walnuts chopped
  • 1 C. Vegetable Oil

Directions:

Mix first 6 ingredients together in a bowl. In another bowl beat eggs until mixed. Add sugar and mix, then add oil and vanilla and mix.  Add flour mixture to wet ingredients and mix. Lastly add zucchini and nuts then mix.  Bake at 350 for 50 minutes (two loaf pans) OR 20 minutes if making muffins.
