• 2 bunches of broccoli, cut into florets
  • EVOO - about 1-2 Tablespoons
  • Salt and Pepper to taste (I like to use kosher salt)
  • 1 tspn or 1 clove minced garlic
  • 1 sliced lemon wedge (if desired)

This is my favorite veggie side dish and it goes so well with so many different main dishes.  The roasting brings out such a good flavor in the veggies!  I usually make this once a week.  You could use a variety of vegetables for this dish as long as they are all cut to roughly the same size.  I usually just use broccoli because we love the way that tastes best, but every once in awhile I’ll throw some cauliflower in there, too!  Lyla inhales the broccoli!

Directions:

Preheat oven to 400.  Spread broccoli out on baking sheet and pour EVOO over top.  Sprinkle with salt, pepper, and garlic and then toss.  Spread into an even layer again and bake for about 20 minutes or until slightly browned.  If you like lemon, you could squeeze a slice of lemon over top of broccoli just before serving (not sure if lemon would work with other veggies)!
