• 1 box Funfetti Cake Mix (18 oz)
  • 1/3 cup oil
  • 2 eggs
  • **If you are using a chocolate cake mix, you'll also need about 1/8 to 1/4 cup of water

I saw these cookies on a food blog and decided I had to try them out.  They could not have been easier!  They stayed super soft for days, too!  I then wondered if this worked with any box of cake mix, so I decided to try chocolate… Voila!


If you need to make a treat in a pinch, or even if you don’t, try these out!



Preheat oven to 375.  Combine all ingredients.  (**If you are using chocolate cake mix you’ll also need to add about 1/8 cup of water in order to incorporate all ingredients.  Start small and add just enough water so that it’s all incorporated into a cookie dough consistency.)  Shape into 1 inch balls and place 2 inches apart on ungreased cookie sheet.  Dip the bottom of a glass into a plate of sugar and then press the bottom of the glass down onto each cookie to flatten to about 1/4 inch.  Dip glass into the sugar before each one.  Bake for 6-8 minutes.  Allow to cool for a minute and then remove from pan.
