- 2 lbs. round steaks cut into strips
- 1 T. olive oil
- 3-4 cloves garlic, crushed
- 4 T. Soy sauce
- 1/2 T. Paprika
- 2 Green peppers, largely chopped
- 1 Large onion, largely chopped
- 2 Tomatoes, diced
- 2 1/2 Cups beef broth
- 2 T. corn starch
- Brown rice
This is my mom’s version of pepper steak. It was my absolute favorite dish as a child. It is VERY flavorful given how few ingredients it has. I made the tonight, it leaves your house smelling amazing! I’m not quite sure if the people at Target thought I smelled amazing since the smell was stuck in my clothes as I was shopping after dinner!
Marinate meat for one hour. Marinade: Olive oil, garlic, soy sauce, and paprika. Brown meat in skillet then add 2 Cups beef broth and simmer covered until meat is tender, about an hour and twenty minutes. Then add a half cup (may need a little more depending on how much boiled off) of beef broth plus green peppers, onion, and tomato. Cover and simmer 15 more minutes. In a separate bowl, mix together cornstarch and 1/2 cup water and stir into mixture to thicken. When vegetables are tender its ready serve! Serve over brown rice.
