• 1 1/2 pounds boneless, skinless chicken breast halves, cut into 1-inch cubes
  • 1 green bell pepper and half of one red onion, sliced into 1 inch pieces (if desired)
  • 4 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons crushed dried oregano
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 4 oz feta cheese, crumbled
  • 1/2 cup mayonnaise
  • 2 teaspoons lemon juice
  • 1/4 teaspoon fresh ground black pepper

This is my all time favorite main dish that I make and I owe it all to Casey!  She gave me this recipe awhile ago and I make it all the time!  Since then I have shared it with other friends and it always gets rave reviews!  I’ve made this for some family parties and it always goes over so well.  My whole family loves it, even Lyla!  I almost always serve it with roasted broccoli.  Delicious!!!



Place all marinade ingredients (lemon juice, olive oil, oregano, garlic, salt, pepper) in a medium bowl and then add chicken.  Allow to marinate in refrigerator for 30 minutes to an hour, stirring once or twice.  Combine all of the dipping sauce ingredients (feta, mayo, lemon juice, and pepper) in another bowl and refrigerate until use.  After done marinating, thread chicken pieces onto skewers along with any desired vegetables.  (If you’re using bamboo skewers, soak them in water first.)  Next either grill your chicken skewers (I think it turns out better on the grill) or broil them in the oven about 6 inches from heat for about 8 minutes, or until chicken is no longer pink on the inside. Turn them halfway through cooking time.  Serve with Feta Dipping Sauce.
