  • 3 tablespoons butter, melted
  • 1-2 Apples

This recipe idea is from the new show, The Chew where they made “Fried Apple Pancakes with Hot Apple Cider Syrup”.  Click the link if you want to make it just as they did.  I did a simplified version and stuck to a basic pancake recipe instead of adding the pumpkin pie spice and used regular syrup because I was in a hurry.  It was still really good!  I’m always looking for ways to change up our breakfasts and this was a fun one!

Directions:

If you don’t want to use boxed pancake batter use recipe listed. Preheat griddle to medium heat.  All you really need is an apple or two (depending on how many you are feeding), pancake batter, and syrup.  You can peel the apples if you want, but it’s not necessary.  If you have an apple corer, or an apple corer/peeler/slicer you can use that, but if not then cut slices of apple across the core into about 1/8″ slices.  Next, cut the core out of the middle to make an apple ring.  Dip the apple rings in your pancake batter and cook until golden brown, flipping once.  Serve immediately with syrup and a sprinkle of cinnamon if you choose.

Sift togeter flour, baking powder, salt, and sugar in a large bowl.  Make a well in the center of the mixture and pour in the milk, egg, and melted butter.  Mix until smooth. (from allrecipes)
