• 2 to 3 pound pork roast
  • 3 cans Coca-Cola
  • 1 cup brown sugar
  • 2 cloves minced garlic
  • 1 can diced green chilies
  • 1 (15 ounce) can tomato sauce
  • 1 packet taco seasoning
  • 1 cup salsa verde
  • 1 packet dry ranch dressing mix
  • 1/3 cup cilantro
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 clove minced garlic
  • 1/2 teaspoon salt
  • 1 tablespoon lime juice
  • 1/4 teaspoon cumin
  • 1/4 cup sugar
  • Tortillas, shredded cheese, and lettuce for serving

If you’re looking for something with lots of flavor, here it is!  I was curious about this recipe and I’m so glad I tried it!  It’s nothing like your average taco.  The meat and dressing are so good and they’re great together!  I even ate this as a salad for lunch the next day and I liked that just as much!


Place pork roast and all marinade ingredients ( coca-cola, brown sugar, 2 cloves minced garlic, green chilies, tomato sauce, and taco seasoning) in crock pot.  Cook pork on low for 6-8 hours, or until pork is tender and shreds easily.  Meanwhile, blend salsa verde, dry ranch dressing mix, cilantro, mayo, garlic, salt, lime juice, cumin and sugar in food processor or blender and chill until ready to serve. Shred pork in a bowl, adding a few spoonfuls of the marinade that it cooked in for extra flavor and juiciness.  Serve on flour tortillas, with dressing, lettuce, and cheese if you please or it’s great as a salad, too!
