• 2 flour tortillas
  • 1 Avocado, diced
  • 1/2 C. or more of cheddar cheese (may substitute cheese of your choice)
  • 2 green onions sliced
  • butter
  • sour cream
  • salsa

Just a quick lunch idea. I’m sure all of you are able to think of this concoction on your own but sometimes it’s nice to have a few fresh ideas made with ingredients that you might already have in your fridge!

Directions:

Butter one side of one of the flour tortillas, place in pan. Top with cheese, avocado, and green onions. Place other flour tortilla (butter side up as if you were making a grilled cheese) on top. Brown both sides and cook until cheese is melted. Serve with sour cream and salsa!
