• 1/2 C. chicken broth
  • 2-3 Tbsp. reduced fat peanut butter
  • 2 tsp. Chili sauce
  • 1 1/2 Tbsp. honey
  • 3 Tbsp. Soy sauce
  • 1 1/2 Tbsp. fresh minced ginger
  • 3 cloves garlic, minced
  • 8 oz. Rice noodles
  • chopped green onions
  • chopped cilantro
  • 2 limes, cut into quarters
  • chopped peanuts

Oh my, so good! I add chicken to this and it makes for a tasty meal!

*you can add meat to this dish by stir-frying very thinly-sliced chicken (partially freeze first before slicing) in some olive oil with a couple cloves of garlic, fresh ginger, green onions, soy sauce, and chili sauce. Then add to noodles at the very end.

Directions:

Cook noodles in salted water.  In the meantime, combine chicken broth, peanut butter, chili sauce, honey, soy sauce, ginger, and garlic in a small saucepan over medium-low heat. Whisk until smooth and remove from heat. Toss cooked noodles with sauce (add chicken at this time). Sprinkle with green onions, chopped peanuts, cilantro, and garnish with limes. Before eating, squeeze lime juice over noodles and stir to combine. Don’t skip out on the lime, it is an important flavor at the end!
