• 3 eggs
  • 2 tablespoons milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 6 slices of split-top sandwich bread
  • fresh berries, sliced
  • syrup (optional)
  • vanilla or strawberry yogurt or cream cheese filling (recipe below)

We aren’t big on big expensive gifts for holidays like Valentine’s Day or Sweetest Day, but I do love making fun meals and treats for my family on these days!  I’ve made these heart shaped french toast cups for a few years now and they’re so fun and perfect for a lovey-dovey holiday, or any day you want to show someone that you love them!

Directions:

Preheat oven to 375.  With nonstick cooking spray, spray the inside and around the edges of 6 cups of a muffin tin and set aside.  Make sure you do this well, or they won’t come out easily!  In a medium bowl, whisk together eggs, milk, cinnamon, and vanilla.  Cut a slit in each piece of split top sandwich bread from one of the two bottom corners to the middle of the piece of bread (picture below).  Dip bread in the egg mixture, coating both sides.  Holding the corner of bread that you cut a slit in, overlap the bread to make a heart shape and place in muffin tin cup (picture below).  Repeat for all bread.  Bake french toast cups in muffin tin for 13-15 minutes or until lightly browned.  Allow french toast cups to cool slightly before removing from tin.  Fill each cup with your desired toppings (yogurt or cream cheese filling, syrup, and berries).  If you want to pipe the yogurt or cream cheese filling into any decorations, just put the filling in a small ziploc, close it, and cut a small corner off the bottom of the bag and pipe away!

Cream Cheese Filling:

4 oz cream cheese (half of a brick), softened
3/4 cup powdered sugar
1/2 teaspoon vanilla
2-3 tablespoons milk

In a mixing bowl, blend cream cheese, powdered sugar, and vanilla until well mixed.  Add milk, one tablespoon at a time, blending between each tablespoon, until desired consistency is reached.
