• 2 cups grated Parmesan cheese, divided
  • 1 cup Italian bread crumbs
  • 1 cup Caesar salad croutons, coarsely crushed
  • 1 cup fresh baby spinach, roughly chopped
  • 1 cup Caesar salad dressing, divided
  • 4 boneless, skinless chicken breast halves

I just made this for the first time a few weeks ago and had to repeat it again the next week because it was so good.  This has definitely become a regular on my meal list!

Directions:

In a large bowl combine 1 cup Parmesan cheese, crushed croutons, spinach, and 1/2 cup salad dressing.  Cut/slice the thick part of the chicken breast to create a pocket and fill with spinach/cheese mixture.  Put 1 cup Parmesan cheese and 1 cup bread crumbs in another bowl or large plate and mix breadcrumbs and cheese together and set aside.  Put remaining salad dressing in a bowl.  Being careful not to lose the spinach filling, coat each chicken breast with the dressing either by using a brush or dipping the chicken in the dressing.  Next, cover chicken breast with the breadcrumb/cheese mixture and transfer to a greased cookie sheet or 13×9 dish.  Bake uncovered at 375 for 45 minutes or until chicken is no longer pink (internal meat thermometer should read 170).
