• 1 lb. Italian sausage
  • 1 large onion, chopped
  • 1 clove garlic, chopped
  • 3 (14oz) cans beef broth
  • 2 (14oz) cans diced tomatoes, drained
  • 1 (8oz) can tomato sauce
  • 1 Cup dry red wine
  • 2 carrots, thinly sliced
  • 1 Tbsp. sugar
  • 2 t. Italian seasoning
  • 2 small zucchini, sliced
  • 1 (9oz.) pkg. refrigerated cheese tortellini
  • 1/2 cup shredded Parmesan cheese

Directions:

Cook sausage, onion, and garlic in a large pot over med-high heat, stirring until sausage crumbles and is no longer pink. Drain if needed. Stir in broth and next six ingredients. Bring to a boil then simmer for about 2 hours. Stir in zucchini and tortellini about 20 minutes before done. Sprinkle with parmesan cheese when serving.
