|Happy 1st Birthday to my little Evan today! Can’t believe my BABY is a year old! I called up Melissa this weekend in a panic the night before I was having a birthday dinner at my house. I had nothing planned, no menu, no grocery shopping done, no theme, NOTHING prepared! Really, I’m not always as organized and on top of my game as some people may think :/ ! She gave me this wonderful idea to make a fruit pizza in the shape of the #1. Genius. Done. Loved it…
Heat oven to 350. Grease cookie sheet. Break up cookie dough; arrange as you like; press dough evenly on bottom of pan to form the crust. Bake 12-15 min. or until golden brown. Cool completely, about 30 minutes. In a small bowl, beat cream cheese, sugar, and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust. Arrange fruit over cream cheese. Stir jelly until smooth, brush over fruit. Refrigerate until chilled, at least one hour. Cut into wedges or squares. Store in refrigerator.
