• 1 lb. Homemade Taco Meat (see link at bottom of directions)
  • 2 hearts of romaine plus half head iceburg lettuce
  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced
  • 2 tomatoes, diced
  • 1/2 can corn, roasted
  • cheddar or mexican cheese
  • green onion for topping
  • Fritos or Tostitos
  • 3/4 C. Thousand Island Dressing
  • 1/2 C. Salsa
  • 1/2 T. Sugar

Another good salad! I’ve been making this one for a few years now, just haven’t gotten to taking a picture of it! I don’t know why but I never use to put corn on it until this past time. One of the Panera salads that I had recently had roasted corn on it. SO put a little olive oil in a pan, heat up the oil, and throw a little bit of canned corn in there, cook until brown. It works for now until it is grill season again! Mix the last three ingredients together for the dressing. The dressing is spectacular!
