• 3 boneless, skinless chicken breasts
  • 8 oz. Cream cheese (reduced fat)
  • 3 green onions, sliced
  • 1 large jalapeño, seeds removed and minced
  • 5 slices of bacon, cooked and crumbled
  • the juice of 1/2 a fresh lime or 1 T. lime juice
  • 1/2 C. shredded cheddar cheese
  • 1 1/2 C. panko bread crumbs
  • 1 T. olive oil
  • 1/2 C. flour
  • 1 egg, beat
  • 1/2 t. garlic salt
  • 1/4 t. onion powder
  • 1/4 t. pepper

This is another Pinterest inspiration. I kind of combined a few different recipes and did a little bit of my own thing as well and it turned out spectacular!! I really don’t ever eat jalapeño poppers but now I’m thinking that maybe I should. This would be a good chicken dish to make for a dinner party. It seems like it would take a lot of effort, but it doesn’t at all. It only tastes that way!

Directions:

Preheat oven to 350. Place foil on cookie sheet and spray foil with nonstick cooking spray.

Warm cream cheese in microwave until room temperature and easy to stir. Add cheddar cheese, bacon, green onion, jalapeños, and lime juice, stir until well combined.

Next, heat olive oil in pan and add panko bread crumbs. Cook on medium heat for several minutes until panko crumbs are browned. Add garlic salt, onion powder and pepper, mix well. Pour on large plate and spread out to cool and set aside. At this time you can also beat one egg and pour into shallow dish and pour flour in a shallow dish. Line them up on your counter all in a row in the following order.. Flour, egg, bread crumbs. Now you will be ready to dip and roll when time comes!

Cut all three pieces of chicken in half (width wise, like you are filleting it) so you end up with 6 chicken breasts. Pound thin. Scoop cream cheese mixture onto each piece of chicken and spread down middle of chicken. Roll chicken up, then roll in flour, dip/roll in egg, then coat with bread crumbs. (This step gets kinda messy. I did one chicken at a time then washed hands in between so that my fingers didnt look like breaded chicken as well!) Place each on pan and bake for about 25 minutes until chicken is no longer pink.
