  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter, soft
  • 2 eggs
  • juice from 1/2 lemon (~1T)
  • zest from 1/2 lemon (~1t)
  • ~Glaze
  • 1/2 cup powdered sugar
  • 1 Tablespoon lemon juice
  • additional lemon zest

When life gives you lemons, make these lemon bars!!!  Oh my, these are fantastic!  They’re so refreshing.  I don’t know what it was about this recipe that made me want to try it… but I just knew it would be good!  These lemon bars are very much the consistency of a nice soft brownie.  So good!  They look kind of fancy, but they’re so easy to make!  I’ll definitely be making these often!  I couldn’t keep my family out of them!


(This makes an 8×8 pan.  Double ingredients for a 13×9 and add 5 minutes to baking time.)

Pre heat oven to 350 and coat an 8×8 pan with non-stick cooking spray or butter.  Coat well so bars are easy to remove from pan.  Combine flour, sugar, and salt in a large bowl.  With a mixer, add butter and mix until combined.  In another bowl whisk the eggs, lemon juice, and lemon zest.  Add egg mixture to the flour mixture and mix well.  Pour into 8×8 pan.  Bake at 350 for 25-27 minutes or until edges are very lightly browned. Allow to cool.  Meanwhile, combine glaze ingredients in a small bowl.  Pour over bars after they have cooled.  Cut, serve, and enjoy!
