• 1 (8.5 ounce) box cornbread mix (yields about 16 mini muffins)
  • Ingredients needed to make basic cornbread recipe on box. Jiffy's is 1 egg and 1/3 cup milk
  • 2 hot dogs

This is so easy to make and it’s a total kid pleaser!  Feel free to use your own cornbread mix recipe, but I was going for ease and speed with this one!  Great for a busy night!  And who doesn’t love corn dogs?  A great alternative to the fried version!

I’ve even made these where the piece of hot dog is more on the upper portion of the muffin with the top exposed and stuck lollipop sticks in them after they were done cooking!  {Corn dog pops!}


Pre heat oven to 400 and spray mini muffin tin cups with non-stick cooking spray.  Make cornbread mix according to box directions.  Cut hotdogs into 1/2 inch slices.  Place a heaping teaspoon in 16 muffin tins and then place a piece of hot dog in the middle of each.  Next, cover hot dog pieces with another heaping teaspoon of cornbread batter.  Bake for about 12 minutes or until lightly browned.

*Hebrew National hot dogs are great!
