• 4 lbs. red potatoes, quartered
  • 1/2 C. olive oil
  • 3 garlic cloves
  • 2/3 C. heavy whipping cream
  • 1/4 C. butter, softened
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2/3 to 3/4 C. whole milk
  • 3 green onions, chopped
  • 3/4 C. fresh grated Parmesan cheese

Here is a good mashed potato recipe for Thanksgiving. I made these along side some chicken the other night and they were very tasty. I like mashed red skin potatoes, they are always a little more moist. I’ll try to keep the Thanksgiving side dish recipe ideas coming. Don’t expect to see a turkey on here! I’m not going though that hassel if I don’t have to!

This recipe is geared towards a Thanksgiving dinner, serving 12 people. Cut in half if serving for dinner, or even in half again if making for two people!


Place potatoes in a pot; add water to cover. Bring to a boil.  Reduce heat; cook, uncovered, for 15-20 minutes or until tender.  Meanwhile, place oil and garlic in a small food processor (or just put garlic through a garlic press into a bowl with the olive oil in it); process until well blended.

Drain potatoes, return to pan.  Mash potatoes, gradually adding cream, butter, salt, pepper, and enough milk to reach desired consistency.  Stir in green onions, garlic olive oil, and cheese.
