- 2 boneless chicken breasts
- 2 Tbsp. Butter
- 1/2 Packet Good Seasons Italian Dressing Mix
- 1 C. Franks Red Hot Sauce
- Shredded Cheddar Cheese
- Carrots, sliced
- Tomatoes, diced
- Red onion, thinly sliced
- Celery, sliced
- Italian Dressing or Ranch Dressing
WHAT?! A recipe posed by me?! I will admit, this new job has taken up lots of my time. No longer do I have my 2pm meal prep time while the kids are napping. They are now climbing on my legs or running around the house screaming while I am trying to throw together some type of dinner. I have been trying a few new crockpot meals that I made a few weeks ago and froze. Let me tell you how those are tasting, horrible. They were a complete fail. Not impressed. SO this week, I had to cut back on the already prepared crockpot meals and switch to making things that are easily prepped the night before (veggies cut up, meat marinated) so that when I get home, dinner can be made quickly! I knew that Rachel Ray had a show about make ahead meals so I looked up a few of those and I’m trying them this week. Maybe some will be appearing on here soon!
Set crockpot on HIGH for 4 hours. Place first four ingredients in crockpot. When done, take chicken out and shred. Cut up lettuce, layer your toppings, placed shredded chicken on top. I prefer Italian dressing (my dressing of choice on just about every salad I eat) but Ranch sounds like it would go with this quite nice! That is what Travis had and he said it was delish!
