- 2 eggs
- 2 egg yolks
- 1 cup flour
- 2 tablespoons oil
- 1 1/4 cup milk
- Fillings of Choice: Fruit, Nutella, Sugar, Strawberries, Blueberries, Bananas, Whipped Cream, Apple Butter, Jelly, Preserves, etc.
Crepes, or Palatschinken, as we call them, have always been a special breakfast in my family. They’re the Austrian version of pancakes. This was my Oma’s (Grandma’s) recipe. We all have our own favorite fillings: Nutella, Sugar, Strawberries, Blueberries, Bananas, Whipped Cream, Apple Butter, any Jelly or Fruit Preserves to name a few! We get all the fillings out and make a very informal little “crepe bar” station and make them just the way we like them! This could be a fun Christmas breakfast, or any day breakfast, really! These freeze well with a piece of wax paper between each one. Then you can reheat them in the microwave or toast them up quickly in a pan over medium heat!
In a blender combine the eggs, egg yolks, and flour and blend well. Slowly add oil and milk a little at a time and blend again. Heat small or medium frying pan over medium-high heat. Add a little bit of oil or butter to the pan to prevent sticking and rotate pan to coat well. Add a small amount of batter to the pan, maybe 1/4 cup (depends on pan size) and rotate pan so that batter covers the bottom of the pan thinly, but completely. Allow crepe to lightly brown and then flip and brown the other side. The first one almost never turns out perfect so adjust heat and amount of batter as necessary. Stack them in a pile and keep warm with a paper plate on top. Add your favorite filling, roll, and enjoy!!!
