• ~ burger ~
  • 1lb ground chicken
  • 2 green onions, chopped
  • 1/4 cup chopped red bell pepper
  • 2 Tablespoons chopped cilantro
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1 lime, cut in half
  • 4 slices pepper jack cheese
  • 4 buns, toasted
  • ~ guacamole ~
  • 1 avocado
  • garlic powder
  • salt & pepper
  • squirt of lime or lemon juice

I needed a new burger recipe.  This woke up our taste buds!  I loved the veggies in the burger, the pepper jack cheese on top, and the guac on top of that!  This will definitely be a frequent entree on my menu!  I even made them for my girls (minus the red pepper flakes and pepper jack cheese)… they both ate their entire mini-burgers.  I’ve discovered that my little one isn’t a fan of most meats, but these burgers and the spinach and feta turkey burgers are child approved.  Try it, you’ll like it, too!

*I like to double this recipe and instead of making 4 burgers with the single recipe, I make 6 or 7 bigger burgers and we eat the leftovers for lunch the next day!

Directions:

Combine chicken, green onions, bell pepper, cilantro, garlic, salt, red pepper flakes (more if you like it spicy) and juice of half a lime in a large bowl. Mix until thoroughly combined, then form into 4 patties.
Heat a large grill pan or skillet over medium-high heat. Grill burgers for 3-4 minutes a side, or until cooked all the way through. Place a slice of cheese on top of each burger, then cover with a large pot lid, and allow to melt for about a minute. Remove burgers to a plate, tent with foil, and allow to rest for 5 minutes. Place each burger on a toasted thin bun, then top with guacamole.
For the guacamole: Mash all ingredients together with a potato masher or fork.
