• 8 oz extra lean ground beef or turkey
  • 1 3/4 cup pizza sauce
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/4 teaspoon garlic salt
  • 1 can Pillsbury refrigerated buttermilk biscuits - 7.5 oz can
  • 2/3 cup + 1/4 cup grated mozzarella cheese

Crazy Pizza!  The name alone caught my eye.  And then I saw that it was basically a pizza in casserole form.  What’s not to love?  This recipe is versatile… add ground turkey instead of ground beef if you like and toss in your favorite pizza toppings!  I chopped my veggies up in a food processor so they were invisible to the toddler’s eye.  I don’t typically sneak veggies into their food, but I knew if they saw them, they’d give me a hard time and I wasn’t feelin’ the struggle this day! haha!

Directions:

Preheat oven to 350 degrees F. Spray an 8×8 inch baking dish with cooking spray. In a large skillet brown meat. Add mushrooms, green pepper, and onion (I chopped mine in a food processor first). Mix well to combine. Stir in pizza sauce and any of your favorite pizza type spices.  Maybe a pinch of: Parsley, Oregano, Garlic Powder/Salt, or none if you prefer, it’s good either way!  Remove skillet from heat. Separate biscuits and cut each biscuit into 4 pieces. Gently stir biscuit pieces into meat mixture. Pour half of mixture into prepared baking dish.  Sprinkle 1/4 cup of mozzarella cheese on top.  Top with remaining half of meat mixture.  Bake 20 minutes. Sprinkle 2/3 cup shredded mozzarella cheese evenly over the top. Continue baking until cheese melts, about 10 minutes. Place baking dish on a wire rack and let set 5 minutes.
