• 3/4 cup (1 and 1/2 sticks butter) softened
  • 1 1/2 cups brown sugar, lightly packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2.5 cups apple, peeled and chopped small
  • cinnamon-sugar to taste

Life sure seems to be busy for everyone lately… thus the reason we haven’t posted much!  It’s something both Casey and I enjoy doing, it’s just hard to find the time!  Anyhow… Do you know what I don’t like?  Complicated, lengthy recipes.  Do you know what I love?  Simple, easy, delicious recipes!  And these Apple Blondies are just that!  Dessert bars are so no-fuss and I’m almost positive that most everyone has all the ingredients at home for these!  You could make these just for a nice, fast dessert for your family, a potluck, holiday party, etc.  And how good would these be with vanilla ice cream and caramel syrup?!?!  YUM!

Directions:

Preheat oven to 350 degrees. Grease a 9×13 pan and set aside. Cream together butter and sugar, then add the eggs and vanilla and beat together. Next add the flour, baking powder, and salt and beat again. Last, add the apples. Mix well and spread in pan. Sprinkle with cinnamon-sugar and bake, uncovered, for 30 minutes.
